Back when I started this game, before I understood much of anything, I colonized a planet with 67 fields.  I didn't know about abandoning and re-colonizing at the time.  It has 12/15/12/16 Ore/Crystal/Hydro/Solar currently.  

Would you recommend I re-colonize and lose all my buildings/resources?  Should I focus entirely on 1 resource on the planet instead of all 3?  And most importantly.... why to any answers (because nothing is more annoying than an assumption I should just take a person on their word of "yes" or "no" :P)?

I would recolonize if all my other planets where bigger then 190 spots. I got a colony in the same situation and I use it to create ships and resources for smaller colonies. As soon as they are up to speed ill Abandon it and start a new one.

I would keep the colony until you fill up your other planet slots, and then if that colony has the least amount of space left I would abandon it.  But as stated above use that colony's resources until you need to abandon it.  Help build up the other planets until they are close to that one then kill it and recolonize another planet.

I'm a n00b (about 3 weeks in) to the game, yet I have 2 planets with under 100 sots. I'm using both for Hydro only. When I get big enough, I'll abandon both, and hunt for full size worlds.

So not much of a yes or no, just a what I'm doing answer.

You will eventually get rid of it, but there won't be any need to until your other 8 planets are well established. As long as you have it, it adds to your production, but once your other planets are all powerful then you need to consider starting this one fleet over. You'll be able to take the small loss of production at that point so that you'll make a lot more later on once it's replaced with a large planet.

For now keep it....

Once you have 6/7 well built up planets with 165+  you may keep 2 planets as mobile battle stations any how, so for now use its to ship out resources to your other planets and help them progress a little quicker.

Thats my answer and advice.
