How many Plasma Cannons does it take to take down an average Zeus?

Just use battle calc.

With equal W/A/S it takes 35 plasma cannons to have a chance of taking out a lone Zeus. Any less and you won't do enough hull damage any more increases your chances of blowing it up as 35 only has about a 36% chance of blowing it up.

speed sims says it takes 37 plasmas to have a 100% chance of killing the zeus with 36 its 98% and with 35 its 86%

I have never used speed sim... I put W/A/S at 12 each for both sides but I don't think that matters as they are the same on both sides.

Speedsim is significantly more accurate than Battlecalc. Nothing at all against Lucien, who I have much respect for for making Battlecalc available. Battlecalc's good, but Speedsim has never been wrong in the four months I've used it.

Those are technically correct answers to the question you asked.

But please don't jump to the conclusion that 37 or 38 plasma cannons protect you from Zeus attacks.   Remember the mechanics of battle in this game - Everything that is attacking gets to fire and everything defending gets to fire - but the targeting is randomly spread over all things on the other side.  So if you have 40 plasma's and are attacked by 1 Zeus and 9 other ships - during round one the Zeus will only likely get hit by 4 plasma's which will not even break the shields (which automatically regenerate each firing turn).  Second firing round - it will depend on how many ships survived the 1st round as to how many hits your plasma's get on the Zeus.  And you have to kill it by the 6th round or the battle is over, attacker is sent home empty handed but the ships that lived through round six go back home.

Most people that attack - will include significant "fodder" (cheap expendable ships to take some of the hits) to protect their big expensive ships.

Easiest defense from a Zeus attack is Fleet save/resource save - unless you have some friends that are willing to pull a group defend ninja - which is very possible since Zeus move so slow - you will get at least 5 hours notice of a incomming Zeus attack - perhaps a lot more,

with 37 plasmas it only takes 3 arties to make the zeus survive 100% of the time so it is very unlikely that 37 plasmas would stop a zeus attack

No one has 100 Zeus...yet.

Each one is worth 9k build points meaning that 100 would be 900k build points and there are only 3 players in original that have that and none have enough build points after that to have researched the techs to do it along with mines. In extreme the highest build points are right around 500k right now so it is not as developed yet either but gaining quickly.
